OK, top 3 live recordings from each U2 tour....
Now for my part, I avoid audience recordings unless they are straight up 5/5 stars (like Chicago '87). Otherwise I like to stick to soundboard or broadcast recordings. IEM recordings are sometimes good too.
I will post my '90s answers and may add more later:
ZooTV:
1. Dublin '93 (best bootleg in existence IMO, both performance- and recording-wise)
2. Sydney '93 (slightly better quality than Adelaide, and it contains the Zooropa stuff that the Dublin show didn't)
3. Washington DC (great recording, killer performance of Ultraviolet)
PopMart:
1. Tel Aviv (great quality, Bono is in good form)
2. Leeds (Bono is super amped and even tells George Harrison to go #@$% himself before EBTTRT)
3. Santiago (quality not as good as Mexico City but Bono's vocals seem better to me).
There are too many good recordings from Boy-War to list, and unfortunately I have never found a bootleg from the UF tour that I like and consider definitive of that era.
Anyone else care to fill this incomplete list in?
